Just give him a room filled with full bellies and wide grins and Paul Kennedy is happy.

This aspiring cook was born and raised in the pleasant town of Bellevue, Nebraska near Omaha and decided a career in hospitality was his future. Why? Because the back-of-house was where the cool kids worked. Paul skipped the traditional culinary school route, moved to Denver to be with his mom and start his career in the kitchen.

Working through a series of progressively responsible positions at Denver favorites Euclid Hall. Ernie’s Pizza, Brightmarten and Milk Market, always looking forward to the day the head chef knew his name. Paul returned to the Crafted Concepts restaurant group as sous chef at Stoic & Genuine in 2021. He took on the executive chef role in December of 2022 hasn’t looked back.

Paul cites the everyday home cook as the inspiration for his food which he labels simple, homey, warm and familiar – something the Stoic & Genuine regulars agree with wholeheartedly. His philosophy is reflected in his choice of a McDonald’s Triple Cheeseburger as the one food he can’t live without. He suspects you feel the same.
